Carrots are rich in vitamins and minerals that boost immunity. They contain vitamin A that is good for the eyes. Try this easy, nourishing soup to pep you up after a tired day.
2 – carrots, medium sized (roughly chopped)
1/4 cup – milk
1/2 cup – water
1/2 medium sized – onion, finely chopped
4 pearls – garlic
1/2 – tomato
1/2 tsp – pepper powder
Garam masala powder, a generous pinch
1 tsp – oil
1/2 tsp – butter
2 tsp – cream (for garnishing)
Salt as required
A few bread slices, cubed in small sizes (toasted)
Cook chopped carrots with 1/2 a cup of water, until it becomes soft; allow it to cool.
Heat oil in a pan, add onions, garlic with a pinch of salt and saute for few minutes, then add tomato and saute till it becomes mushy.
Now add cooked carrots and onion tomato mixture to a blender and grind it to a smooth paste.
Heat a pan, add butter and the ground mixture; fry for a minute or two.
Now add milk, pepper powder, garam masala powder, required salt and bring it to a short boil.
Switch off and garnish with cream.
Serve hot or warm with garlic bread or soup sticks.
