Health recipe of the day: Indian carrot salad
Carrots are notably rich in anti-oxidants, vitamins and dietary fiber and do not contain starch. They are exceptionally rich sources of carotene and vitamin A. They are also rich in minerals like copper, calcium, potassium, manganese and phosphorus. Potassium is an important component of cell and body fluids that helps controlling heart rate and blood pressure.
Carrots are used mainly in salads and they are mostly eaten raw. In soups and other dishes they are boiled, steamed or roasted.
4-5 – carrots, washed and grated finely
1-2 -green chillies, cut into pieces
1/2 cup – roasted and coarsely ground Peanut (groundnut) powder
chopped Coriander leaves for garnishing
2-3 tbsp – Lemon juice
1/2 tsp – Sugar
salt to taste
1/2 tsp – vegetable oil
1 tsp – Mustard Seeds
4-5 -curry leaves
1/2 tsp – Hing
- Mix the carrots, lemon juice, sugar, green chillies, coriander leaves and peanut powder.
- Season with mustard seeds, hing and curry leaves in oil. Refrigerate.
- Add salt before serving.
